Welcome Fall!!!

Fall is full of new things...new classmates, new clothes, new homework, and for some parents, lots of new concerns.

I am lucky to have two healthy kids that do not have any food allergies.  But, every year, I feel like I'm more and more in the minority.  And as they start their school year with excitement and anticipation, and probably a few shaky nerves, I can't help but think about the kids whose nerves aren't as shaky about meeting new friends, but more about what those friends ate for breakfast before they came to school.

I know there are a lot of moms out there that feel like it's not our responsibility.  It's annoying to have to come up with something other than peanut butter and jelly for lunch and Uncrustables are so easy to get out of the freezer and pop into a lunch bag.  But when my daughter told me this morning that her classroom was ok to have peanuts in and that there is a separate nut free lunch table in the cafeteria, I thought to myself, "Why is it that hard to not send nuts to school?"  I feel like it's the least I can do since I don't have to sit home for the day wondering if my kids are going to need an epi-pen and a trip to the ER.

As moms, we are usually willing to support each other, to encourage when the sleepless nights have us at our wits end, to reassure when nursing is not working, or when potty-training seems like a never-ending road of expensive pull-ups and melt-downs.  But when our kids are getting on the school bus and heading to an independent day of language arts and monkey bars, we seem to let a some of that support go by the wayside.

I recently made a cake for a party that my family was also invited to.  I don't bake any of my cakes with nut products and when one dad's son asked if he could have a piece of cake, the dad looked at me and asked if there were nuts in the cake.  I quickly replied that it was all baked from scratch with no nuts.  And he repeated the question, as if to give me the chance to rethink if there was any chance of the cake being a danger to his child.  This question made me realize even more that 1-I'm lucky to not have food allergies in my family and 2-the struggle that parents of kids that do, has got to be exhausting.  They have to protect their kids from something that is so common and completely harmless to other kids.

And let's be honest, it's not like nuts increase the IQ of our children.  Nuts don't improve reading comprehension and they certainly don't guarantee good behavior, I mean their called "nuts" for crying out loud and some say you are what you eat!  Ha!!

So, why not help out a parent who is really not even asking for help?  Send cheese and crackers, or yogurt, noodles and dressing (not with nuts in it), cream cheese and jelly sandwiches, geez, I think I could start a blog just for recipes that are nut free!  And if you think you don't have time to think about it, then have your kids start participating in packing lunches.  And if you still think it's impossible, read this,

As parents, we teach our kids to be kind and considerate and accepting and supportive of their classmates and to accept differences with no judgment, but from time to time we are quick to complain and not demonstrate the same behavior.

And while I'm certainly not a perfect mom, not even in the locker room of that ballpark, I do like to look for ways to help people out.  This is an easy one.  Slam dunk.


Here is the cake I mentioned earlier!  There's a tealight under the campfire so it really flickered.  Now, if I can make a cake this cute without nuts, imagine what you can do with a school lunch that is nut-free!

It's Been Too Long!!!!

I'm sad to say that my blog gets very neglected.  Cakes are baking, kids are playing, Facebook is updating, but the blog is just hanging out and waiting for some attention.  The blog and the dog could probably do some serious commiserating if given the opportunity!!!

Quite a few milestones since I last updated this page though!

We have reached over 200 "likes" on our Facebook page, which is awesome!

AND Sweet Daisy Cakes held it's first official cupcake fundraiser.  In 24 hours, I baked over 30 dozen cupcakes and raised $700 that was donated to the Red Cross Disaster Relief fund.  It was completely insane but soooo AWESOME.  It's so cool to come together and help.  Especially when there are cupcakes involved!  I'm going to be honest though,  I was not sad to have a cupcake break.

I also had the opportunity to explore my nature-y wilderness side with this hunting cake!  This one was tough because I don't really know a whole lot about hunting or deer or bows or arrows, but I was able to work my own style into it and it was A LOT of fun!


I will admit that I got a little attached to my friends Frank and Lewis.  Yes, I named them and was a little sad to say good-bye : )  Just kidding, it's not like anyone was going to eat them or anything...right????  

As I'm typing this, I'm also watching the Phillies battle it out with the Nats in the bottom of the 10th inning, check that, now moving to the top of the 11th (check that, Nat's hit a grand slam while I was typing...grrrr).  So, this is perfect timing to post a pic of this spectacular Phillies cake.  I'm really proud of this one.  Not only because I'm a huge Phillies fan, but also because of the detail that I was able to accomplish.  It's really cool when you have a specific vision that you can successfully execute.



And finally, DRUM ROLL PLEASE.....

My first ever wedding cake.  I don't know that I need to say much about this cake, other than whenever I look at a picture of it, it makes me smile :)  I'm so grateful that I get to create something that makes people so happy!




There is some fun stuff coming up soon, too!  A princess castle cake, 4th of July cake and if my Dad is lucky, he's going to get a belated Father's Day cake!  Stay tuned!

This was a cake donated to a fundraiser for Concordia Pre-school in Wilmington, DE.  What a fun event!  Ladies dessert night with raffle baskets, silent auction, and wine...PERFECT!  Vanilla Cake, almond swiss meringue buttercream filling, covered in chocolate ganache.  PERFECT!

Busy Busy Week!

I'm so grateful to have an amazing business partner (and husband), that makes it possible for me to make my cake dreams come true.  Other than my 7 year old baker in the making, he's my biggest fan.


This lovely lighthouse cake is vanilla with almond buttercream and made it's debut at a Maine themed luncheon.


A spa themed birthday cake for an adorable 8 year old!  Chocolate cake with vanilla buttercream.


This cake was donated for a beef and beer benefitting the Heart of Hope Caralynn Titter Foundation.  The charity supports families with a child undergoing or waiting for a heart transplant.  Vanilla cake with chocolate buttercream.  I did my best to recreate the tree that is on the website.

My first Fondarific Cake!

What a huge difference a new product and a few hours with an amazing celebrity chef can make!  I'm thrilled that I had an opportunity to spend some time with Chef Dana Herbert from TLC's Next Great Baker and Desserts by Dana.  He is both an amazing chef, cake decorator and person!

He gave me tips and techniques that both increased my ability and my confidence.  All of a sudden, I feel like this cake thing might be for real!

This cake was created for a champagne bridal shower.  Vanilla cake with champagne buttercream filling.  I was nervous about this buttercream at first but it tasted great!

This is my first Fondarific cake.  Fondarific fondant is, hands down, the best fondant I've worked with. The most amazing thing about it is that it doesn't dry out.  It allows for so much more time for working on your cake.  All of the pink is 50/50 fondant/gum paste.

Happy Birthday from Barbie!


This is my daughter's 6th birthday cake and was remarkably easy to do.  Bake a cake in a pyrex bowl and add it on top of a round 6 inch cake.  Frost with buttercream and drape with fondant and having the candles shoot out of her dress is optional :).  Or just have SDC make one of these beauties for you in any color with any Barbie!
